Ingredients
1 lb. salmon, cut into cubes
1 lb. asparagus, trimmed and cut into 1-inch pieces
1/2 cup crumbled feta cheese
1/3 cup heavy cream
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
1/4 teaspoon salt
4 cups cooked pasta
Directions
Heat a large skillet over medium-high heat. Add the salmon cubes and cook until lightly browned, about 5 minutes.
Add the asparagus to the skillet and cook for an additional 3 minutes.
Stir in the feta cheese, cream, Parmesan cheese, garlic, oregano, thyme, pepper, and salt. Reduce the heat to medium-low and simmer for 5 minutes.
Stir in the cooked pasta and cook for an additional 2 minutes, or until the pasta is heated through.
Serve warm.
Interesting Facts
This dish is a great way to use up fresh ingredients. Feel free to substitute the salmon and asparagus with whatever you have on hand.
Feta cheese is a Greek cheese made from sheep or goat's milk. It is salty and has a tangy flavor.
If you don't have heavy cream, you can substitute it with half-and-half or whole milk.
