Ingredients
- 2-3 pounds beef short ribs
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons sesame oil
- 2 tablespoons minced garlic
- 1/4 cup diced onion
- 1/4 cup mirin
- 2 tablespoons gochujang (Korean red pepper paste)
- 1 tablespoon freshly grated ginger
- 2 tablespoons rice vinegar
- 1/4 cup water
Directions
- Combine soy sauce, brown sugar, sesame oil, garlic, onion, mirin, gochujang, ginger, and rice vinegar in a medium bowl and mix until combined.
- Add the short ribs to the Instant Pot and pour the sauce mixture over top. Add the water and stir until everything is well combined.
- Secure the lid and close the pressure valve. Cook on high pressure for 25 minutes.
- Carefully release the pressure and open the lid. Serve the ribs with steamed rice and kimchi.
