Actifried Chicken and Wheat Stir Fry
Ingredients
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups vegetable broth
3 cups cubed butternut squash
1 teaspoon ground sage
1 teaspoon ground thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup vegan cream cheese
1/2 cup vegan shredded cheese
Directions
Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until fragrant, about 3 minutes.
Add vegetable broth, squash, sage, thyme, salt and pepper. Bring to a boil, reduce heat and simmer for about 10 minutes, or until squash is tender.
Remove from heat and stir in cream cheese and 1/4 cup of the shredded cheese. Transfer to the prepared baking dish.
Sprinkle remaining 1/4 cup of cheese over the top. Bake for 20 minutes, or until cheese is melted and bubbly.
Serve and enjoy!
