Vegan Butternut Squash Casserole

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 3 cups cubed butternut squash
  • 1 teaspoon ground sage
  • 1 teaspoon ground thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup vegan cream cheese
  • 1/2 cup vegan shredded cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until fragrant, about 3 minutes.
  3. Add vegetable broth, squash, sage, thyme, salt and pepper. Bring to a boil, reduce heat and simmer for about 10 minutes, or until squash is tender.
  4. Remove from heat and stir in cream cheese and 1/4 cup of the shredded cheese. Transfer to the prepared baking dish.
  5. Sprinkle remaining 1/4 cup of cheese over the top. Bake for 20 minutes, or until cheese is melted and bubbly.
  6. Serve and enjoy!
