Ingredients
- 1 block of extra-firm tofu, drained and pressed
- 1/4 cup of coconut milk
- 1/2 cup of panko breadcrumbs
- 1/4 cup of shredded coconut
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of salt
- 2 tablespoons of olive oil
Directions
- Preheat oven to 375°F.
- Cut the pressed tofu into cubes and place in a medium bowl.
- In a small bowl, combine coconut milk, breadcrumbs, shredded coconut, garlic powder, and salt.
- Toss the tofu cubes with the coconut milk mixture until each cube is evenly coated.
- Line a baking sheet with parchment paper and spread the tofu cubes evenly across the sheet.
- Drizzle the olive oil over the top of the tofu cubes and bake for 15 minutes.
- Flip the tofu and bake for an additional 10 minutes.
- Serve with your favorite side dishes and enjoy!
