Ingredients
1 block of extra-firm tofu, drained and pressed
1/4 cup of coconut milk
1/2 cup of panko breadcrumbs
1/4 cup of shredded coconut
1/2 teaspoon of garlic powder
1/4 teaspoon of salt
2 tablespoons of olive oil
Directions
Preheat oven to 375°F.
Cut the pressed tofu into cubes and place in a medium bowl.
In a small bowl, combine coconut milk, breadcrumbs, shredded coconut, garlic powder, and salt.
Toss the tofu cubes with the coconut milk mixture until each cube is evenly coated.
Line a baking sheet with parchment paper and spread the tofu cubes evenly across the sheet.
Drizzle the olive oil over the top of the tofu cubes and bake for 15 minutes.
Flip the tofu and bake for an additional 10 minutes.
Serve with your favorite side dishes and enjoy!
