Ingredients
- 1 cup shelled edamame, cooked
- 3 tablespoons tahini
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper, to taste
Directions
- In a food processor, combine the edamame, tahini, olive oil, garlic, lemon juice, and cumin. Process until smooth.
- Taste and add salt and pepper, if desired.
- Transfer to a bowl and serve with fresh vegetables or as a spread in sandwiches.
