Ingredients

  • 1 cup shelled edamame, cooked
  • 3 tablespoons tahini
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste

Directions

  1. In a food processor, combine the edamame, tahini, olive oil, garlic, lemon juice, and cumin. Process until smooth.
  2. Taste and add salt and pepper, if desired.
  3. Transfer to a bowl and serve with fresh vegetables or as a spread in sandwiches.
