Ingredients
2 cups grated zucchini
1/2 cup grated Parmesan cheese
1/2 cup all-purpose flour
1/4 cup chopped fresh parsley
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
2 large eggs
1/2 cup panko bread crumbs
1/4 cup vegetable oil
Directions
In a large bowl, combine zucchini, Parmesan, flour, parsley, Italian seasoning, salt, and pepper. Mix until well combined.
Add eggs and mix until ingredients are evenly distributed.
Spread panko bread crumbs onto a plate.
Form the zucchini mixture into patties, about 2 inches in diameter. Dip each patty into the panko bread crumbs, coating each side evenly.
Heat oil in a large skillet over medium-high heat. Fry the fritters for about 2 minutes per side, or until golden brown.
Remove fritters from skillet and drain on a paper towel-lined plate.
Serve warm with your favorite dipping sauce.
