Ingredients

  • 2 cups grated zucchini
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large eggs
  • 1/2 cup panko bread crumbs
  • 1/4 cup vegetable oil

Directions

  1. In a large bowl, combine zucchini, Parmesan, flour, parsley, Italian seasoning, salt, and pepper. Mix until well combined.
  2. Add eggs and mix until ingredients are evenly distributed.
  3. Spread panko bread crumbs onto a plate.
  4. Form the zucchini mixture into patties, about 2 inches in diameter. Dip each patty into the panko bread crumbs, coating each side evenly.
  5. Heat oil in a large skillet over medium-high heat. Fry the fritters for about 2 minutes per side, or until golden brown.
  6. Remove fritters from skillet and drain on a paper towel-lined plate.
  7. Serve warm with your favorite dipping sauce.
