Ingredients
- 2 pounds ground beef
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 1 can (6 ounces) tomato paste
- 2 cans (15 ounces each) kidney beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- 1 tablespoon vegetable oil
- 2 cups beef broth
Directions
- In a large pot, heat the vegetable oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon.
- Add the chopped onion and minced garlic to the pot. Cook for another 5 minutes until the onion is tender.
- Stir in the chili powder, ground cumin, paprika, salt, black pepper, and cayenne pepper (if desired). Cook for 1 minute to toast the spices.
- Add the diced tomatoes, tomato paste, kidney beans, and beef broth to the pot. Stir well to combine.
- Bring the chili to a boil, then reduce the heat to low. Cover the pot and simmer for 30 minutes, stirring occasionally.
- Taste the chili and adjust the seasoning if needed. If you prefer a thicker chili, simmer for an additional 10-15 minutes uncovered.
- Serve hot in bowls with your favorite toppings such as shredded cheese, sour cream, diced onions, or jalapenos. Enjoy!
