Ingredients

  • 1 whole pheasant
  • 6 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil

  • 4 slices bacon
  • 1 onion, sliced
  • 1 cup chicken broth
  • 1/2 cup red wine

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the pheasant and pat it dry with paper towels.
  3. In a small bowl, mix together the minced garlic, olive oil, salt, and pepper.
  4. Rub the garlic mixture all over the pheasant, including the cavity.
