Mozzarella and Herb Stuffed Chicken Breast Sous Vide Style

Ingredients

  • 2 chicken breasts (6 oz each)
  • 1/2 cup mozzarella cheese
  • 1/4 cup fresh herbs, such as parsley, oregano, and thyme
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

  1. Preheat a sous vide water bath to 140 degrees F (60 degrees C).
  2. Cut a pocket into each chicken breast and stuff with mozzarella cheese and herbs.
  3. In a small bowl, mix together the garlic, salt, and pepper. Rub the mixture over the outside of the chicken breasts.
  4. Place the chicken breasts in a sous vide bag and seal according to the manufacturer’s instructions.
  5. Place the bag in the preheated water bath and cook for 1 hour and 15 minutes.
  6. Carefully remove the bag from the water bath. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear until golden brown, about 2 minutes per side.
  7. Transfer the chicken to a plate and serve.
