Ingredients

  • 1 pound boneless, skinless salmon fillet, cut into cubes
  • 1/4 cup plain bread crumbs
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup olive oil
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced

Directions

  1. In a medium bowl, combine the salmon cubes, bread crumbs, parsley, cilantro, cumin, coriander, paprika, cinnamon, ginger, turmeric, garlic, salt, and pepper until well combined.
  2. Form the salmon mixture into 4-6 patties.
  3. Heat the olive oil in a large skillet over medium heat. Add the salmon patties and cook for 5-7 minutes per side, until golden brown and cooked through.
  4. In a small bowl, mix together the mayonnaise and garlic until well combined.
  5. Serve the salmon cakes with the garlic mayonnaise.
