Low-Fat Full-Flavor Cream of Broccoli Soup

Ingredients

  • 1 head of broccoli, chopped
  • 1 onion, diced
  • 1 clove of garlic, minced
  • 2 tablespoons of olive oil
  • 4 cups of low-sodium vegetable or chicken broth
  • 1 cup of low-fat milk
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until the onion is translucent.
  2. Add the broccoli and sauté for an additional 2-3 minutes.
  3. Add the broth and bring to a boil. Reduce the heat and simmer for 10 minutes, until the broccoli is tender.
  4. Remove the pot from the heat and add the milk. Puree the soup with an immersion blender until smooth.
  5. Season with salt and pepper, to taste.
  6. Serve with a sprinkle of freshly grated Parmesan cheese, if desired.
