Ingredients
- 1 head of broccoli, chopped
- 1 onion, diced
- 1 clove of garlic, minced
- 2 tablespoons of olive oil
- 4 cups of low-sodium vegetable or chicken broth
- 1 cup of low-fat milk
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until the onion is translucent.
- Add the broccoli and sauté for an additional 2-3 minutes.
- Add the broth and bring to a boil. Reduce the heat and simmer for 10 minutes, until the broccoli is tender.
- Remove the pot from the heat and add the milk. Puree the soup with an immersion blender until smooth.
- Season with salt and pepper, to taste.
- Serve with a sprinkle of freshly grated Parmesan cheese, if desired.
