Red Apricot and Sparkling Wine Granita

Ingredients

  • 1/2 cup granulated sugar
  • 2 cups of water
  • 1/2 cup of red apricots, chopped
  • 1/4 cup of fresh lemon juice
  • 1/4 cup of fresh orange juice
  • 1/2 cup of sparkling white wine

Directions

  1. In a medium saucepan, combine the sugar and water and heat over medium heat until the sugar is dissolved and the mixture is boiling.
  2. Add the chopped apricots and reduce the heat to low. Simmer for 10 minutes, stirring occasionally.
  3. Remove from the heat and stir in the lemon and orange juice. Allow the mixture to cool to room temperature.
  4. Stir in the sparkling white wine and pour the mixture into a shallow glass pan. Place the pan in the freezer and freeze for 1 hour.
  5. Remove the pan from the freezer and scrape the mixture with a fork to break up any large pieces. Return the pan to the freezer and freeze for an additional hour.
  6. Serve the granita in glasses, topped with a sprig of mint.
