Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup butter, melted
  • 3/4 cup buttermilk
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying

Directions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the melted butter, buttermilk, sugar, egg, and vanilla extract until well combined.
  3. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  4. Cover the bowl with plastic wrap and place in the refrigerator for at least 30 minutes.
  5. When ready to fry, heat a few inches of vegetable oil in a large, deep skillet over medium-high heat.
  6. Drop the dough into the hot oil, a few at a time, and fry until golden brown, about 2 minutes per side.
