Heat olive oil in a large pot over medium heat. Add garlic and onion and cook, stirring often, until the onion is tender and translucent, about 3-4 minutes.
Stir in coriander, cumin, cardamom, turmeric, cinnamon, and cayenne pepper. Cook, stirring constantly, for 1 minute.
Add crushed tomatoes and diced tomatoes and bring to a boil. Reduce heat and simmer for 15-20 minutes.
Stir in cilantro and season with salt and black pepper, to taste.
Serve over spaghetti or other pasta.
