Somali Spaghetti Sauce

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 (28-ounce) can crushed tomatoes
  • 1 (14-ounce) can diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper, to taste

Directions

  1. Heat olive oil in a large pot over medium heat. Add garlic and onion and cook, stirring often, until the onion is tender and translucent, about 3-4 minutes.
  2. Stir in coriander, cumin, cardamom, turmeric, cinnamon, and cayenne pepper. Cook, stirring constantly, for 1 minute.
  3. Add crushed tomatoes and diced tomatoes and bring to a boil. Reduce heat and simmer for 15-20 minutes.
  4. Stir in cilantro and season with salt and black pepper, to taste.
  5. Serve over spaghetti or other pasta.
