Ingredients

  • 1 pound of black-eyed peas
  • 4 strips of bacon
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of black pepper
  • 2 bay leaves
  • 4 cups of water

Directions

  1. In a large pot, cook the bacon over medium-high heat until it is crispy. Remove the bacon from the pot and set aside.
  2. Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.
  3. Add the black-eyed peas, pepper, bay leaves, and water. Cover the pot and bring to a boil.
  4. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
  5. Add the bacon back to the pot and simmer for an additional 5 minutes.
  6. Remove from the heat and serve. Enjoy!
