Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup butter, at room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
  2. In a medium bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg, then stir in the vanilla extract. Gradually stir in the dry ingredients.
  4. Stir in the walnuts (if using). Drop by teaspoonfuls onto the prepared cookie sheets.
  5. Bake for 8 to 10 minutes in the preheated oven, or until golden brown. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
