Ingredients

Directions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
  3. In a large bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until well combined.
  4. Add the eggs and vanilla extract to the butter mixture, and whisk until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots, sour cream, and hot water, making sure not to overmix the batter.
