Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 6 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) red kidney beans, rinsed and drained
  • 1 cup diced zucchini

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
  2. Add the oregano, basil, thyme, cumin, paprika, pepper, and salt and cook for 1 minute more.
  3. Add the broth, tomatoes, beans, and zucchini and bring to a boil. Reduce the heat and simmer for 30 minutes.
  4. Serve warm.
