Ingredients

  • 3 pounds of potatoes, peeled and cut into cubes
  • 1 cup of heavy cream
  • 1/2 cup of butter
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 cup of crumbled blue cheese

Directions

  1. In a large pot, add the potatoes and enough water to cover them. Bring to a boil over high heat and cook for 10-15 minutes, until the potatoes are fork tender.
  2. Drain the potatoes and return them to the pot. Add the cream, butter, salt, and pepper and mash the potatoes with a potato masher until they are creamy and smooth.
  3. Stir in the blue cheese until it is evenly distributed throughout the potatoes.
  4. Serve warm.
