- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled, cored, and chopped apples
- 1 cup raisins
Directions
- Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
- In a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.
- Add the dry ingredients to the creamed mixture alternately with the apples, beating well after each addition. Stir in the raisins.
- Spoon the batter into the prepared cake pan and spread evenly. Bake for 50 to 55 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool for 10 minutes before turning out onto a wire rack to cool completely.
