Ingredients
1/2 cup slivered almonds
1/2 cup dried dates, pitted and roughly chopped
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup chopped fresh parsley
1/4 cup freshly squeezed lemon juice
1/4 cup honey
3/4 cup crumbled feta cheese
1/2 head kale, washed and chopped
Directions
Preheat oven to 350°F.
In a large bowl, combine the almonds, dates, olive oil, salt, pepper, and parsley and stir to combine.
In a separate bowl, whisk together the lemon juice and honey.
Add the feta cheese to the almond-date mixture and stir to combine.
Lay out the kale leaves on a baking sheet and spread the almond-date mixture evenly on top.
Drizzle the lemon-honey mixture over the top and bake for 10 minutes.
Remove from the oven and let cool before serving.
