Ingredients

  • 1/2 cup slivered almonds
  • 1/2 cup dried dates, pitted and roughly chopped
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup honey
  • 3/4 cup crumbled feta cheese
  • 1/2 head kale, washed and chopped

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine the almonds, dates, olive oil, salt, pepper, and parsley and stir to combine.
  3. In a separate bowl, whisk together the lemon juice and honey.
  4. Add the feta cheese to the almond-date mixture and stir to combine.
  5. Lay out the kale leaves on a baking sheet and spread the almond-date mixture evenly on top.
  6. Drizzle the lemon-honey mixture over the top and bake for 10 minutes.
  7. Remove from the oven and let cool before serving.
