Ingredients
- 1/2 cup slivered almonds
- 1/2 cup dried dates, pitted and roughly chopped
- 1/4 cup olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup honey
- 3/4 cup crumbled feta cheese
- 1/2 head kale, washed and chopped
Directions
- Preheat oven to 350°F.
- In a large bowl, combine the almonds, dates, olive oil, salt, pepper, and parsley and stir to combine.
- In a separate bowl, whisk together the lemon juice and honey.
- Add the feta cheese to the almond-date mixture and stir to combine.
- Lay out the kale leaves on a baking sheet and spread the almond-date mixture evenly on top.
- Drizzle the lemon-honey mixture over the top and bake for 10 minutes.
- Remove from the oven and let cool before serving.
