Ingredients
4 mahi-mahi fillets
2 tablespoons olive oil
1/2 cup sun-dried tomatoes, chopped
1/2 cup artichoke hearts, chopped

Directions
Preheat oven to 400 degrees F.
Drizzle olive oil over mahi-mahi fillets and season with salt and pepper.
In a baking dish, combine sun-dried tomatoes, artichoke hearts, garlic, white wine, and lemon juice. Mix to combine.
Place mahi-mahi fillets in baking dish and top with Parmesan cheese.
Bake in preheated oven for 25-30 minutes, or until fish is cooked through.
Serve with your favorite side dishes.
