Ingredients

  • 4 mahi-mahi fillets
  • 2 tablespoons olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup artichoke hearts, chopped
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • 1/4 cup fresh lemon juice
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400 degrees F.
  2. Drizzle olive oil over mahi-mahi fillets and season with salt and pepper.
  3. In a baking dish, combine sun-dried tomatoes, artichoke hearts, garlic, white wine, and lemon juice. Mix to combine.
  4. Place mahi-mahi fillets in baking dish and top with Parmesan cheese.
  5. Bake in preheated oven for 25-30 minutes, or until fish is cooked through.
  6. Serve with your favorite side dishes.
