Ingredients
- 4 mahi-mahi fillets
- 2 tablespoons olive oil
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup artichoke hearts, chopped
- 2 cloves garlic, minced
- 1/4 cup white wine
- 1/4 cup fresh lemon juice
- 1/4 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
Directions
- Preheat oven to 400 degrees F.
- Drizzle olive oil over mahi-mahi fillets and season with salt and pepper.
- In a baking dish, combine sun-dried tomatoes, artichoke hearts, garlic, white wine, and lemon juice. Mix to combine.
- Place mahi-mahi fillets in baking dish and top with Parmesan cheese.
- Bake in preheated oven for 25-30 minutes, or until fish is cooked through.
- Serve with your favorite side dishes.
