Ingredients

  • 1 package of seitan
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 tablespoon of olive oil
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 4-6 tortillas
  • Optional toppings: salsa, vegan sour cream, guacamole, etc.

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the seitan, red pepper, and onion to the skillet. Sprinkle with chili powder, cumin, salt, and pepper.
  3. Cook, stirring often, until the vegetables are tender and the seitan is lightly browned, about 10 minutes.
  4. Warm the tortillas according to package directions.
  5. Divide the seitan mixture among the tortillas. Add desired toppings.
  6. Serve warm.
