- 1/2 cup unsalted butter, softened
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda

- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 2 cups rolled oats
- 1 cup finely chopped apples (about 2 medium apples)
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet ingredients and mix until incorporated.
- Stir in the oats and apples. Drop the dough onto the prepared baking sheet in 1 1/2-inch mounds, spacing them 2 inches apart. Bake for 12 to 15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
