Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup finely chopped apples (about 2 medium apples)

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet ingredients and mix until incorporated.
  4. Stir in the oats and apples. Drop the dough onto the prepared baking sheet in 1 1/2-inch mounds, spacing them 2 inches apart. Bake for 12 to 15 minutes, or until the edges are lightly golden.
  5. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
