Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground turmeric
  • 1 cup long grain white rice
  • 2 cups vegetable broth
  • Salt and pepper, to taste

Directions

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the bell peppers and cook for an additional 5 minutes or until they are tender.
  4. Stir in the cumin, coriander, chili powder, and turmeric and cook for 1 minute.
  5. Add the rice and stir to coat in the spices.
  6. Add the vegetable broth and bring to a boil.
  7. Reduce the heat to low, cover, and cook for 20 minutes.
  8. Remove from the heat and let sit for 5 minutes before serving.
