Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground turmeric
- 1 cup long grain white rice
- 2 cups vegetable broth
- Salt and pepper, to taste
Directions
- Heat the oil in a large saucepan over medium-high heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell peppers and cook for an additional 5 minutes or until they are tender.
- Stir in the cumin, coriander, chili powder, and turmeric and cook for 1 minute.
- Add the rice and stir to coat in the spices.
- Add the vegetable broth and bring to a boil.
- Reduce the heat to low, cover, and cook for 20 minutes.
- Remove from the heat and let sit for 5 minutes before serving.
