Ingredients
- 1 lb. sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups frozen hash brown potatoes
- 1 cup shredded Cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 8 eggs
- 1/2 cup milk
- Preheat oven to 375°F.
- In a large skillet over medium heat, cook sausage, onion, and garlic until sausage is no longer pink; drain fat.
- In a 9x13-inch baking dish, layer frozen potatoes, sausage mixture, and cheese.
- In a medium bowl, beat eggs, milk, salt, and pepper; pour over casserole.
- Bake for 25-30 minutes, or until eggs are set.
- Let stand 5 minutes before serving.
- This dish is great for a lazy weekend breakfast, but it can also be served for lunch or dinner.
- You can also add other ingredients such as bell peppers or mushrooms to the casserole.
