Ingredients

  • 1 sheet of puff pastry, thawed
  • 1/4 cup butter, melted
  • 1/2 cup almond flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon almond extract
  • 1 egg, lightly beaten
  • 1/2 cup raspberry jam
  • 1/4 cup sliced almonds

Directions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Roll out the puff pastry on a lightly floured surface into a 12-inch circle.
  3. Transfer the pastry circle to a baking sheet lined with parchment paper.
  4. Brush the pastry with the melted butter.
  5. In a bowl, mix together the almond flour, sugar, almond extract, and egg until combined.
  6. Spread the almond mixture over the pastry, leaving a 1-inch border.
  7. Spread the raspberry jam over the almond mixture.
  8. Fold the pastry border over the filling, pleating where needed.
  9. Brush the pleated border with the remaining melted butter and sprinkle with the sliced almonds.
  10. Bake for 25-30 minutes, or until the pastry is golden brown.
  11. Cool completely before serving.
