Ingredients

  • 1 cup whole milk
  • 2 tablespoons matcha powder
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

Directions

  1. In a medium saucepan, whisk together the milk, matcha powder, sugar, cornstarch, and salt until smooth.
  2. Place the pan over medium heat and bring the mixture to a boil, whisking constantly.
  3. Reduce the heat to low and continue to cook, stirring constantly, for about 5 minutes, or until the mixture has thickened.
  4. Remove the pan from the heat and stir in the vanilla extract.
  5. Pour the mixture into a bowl and cover with plastic wrap, making sure that the plastic wrap is touching the top of the mixture.
  6. Chill the mixture in the refrigerator for at least 4 hours.
  7. Once chilled, transfer the mixture to an ice cream maker and freeze according to the manufacturer’s instructions.
  8. Once churned, transfer the ice cream to an airtight container and freeze for at least 4 hours before serving.
