Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can fava beans, drained and rinsed
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook, stirring occasionally, until the onions are softened, about 5 minutes.
  3. Add the carrots, oregano, paprika, cumin, salt, and pepper and cook, stirring occasionally, until the carrots are slightly softened, about 5 minutes.
  4. Add the vegetable broth, tomatoes, and fava beans and bring to a boil.
  5. Reduce the heat to low and simmer, stirring occasionally, until the stew is thick and the flavors are blended, about 25 minutes.
  6. Stir in the parsley and serve hot.
