Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, peeled and diced
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon black pepper
4 cups vegetable broth
1 (14-ounce) can diced tomatoes
1 (14-ounce) can fava beans, drained and rinsed
2 tablespoons chopped fresh parsley
Directions
Heat the olive oil in a large pot over medium-high heat.
Add the onion and garlic and cook, stirring occasionally, until the onions are softened, about 5 minutes.
Add the carrots, oregano, paprika, cumin, salt, and pepper and cook, stirring occasionally, until the carrots are slightly softened, about 5 minutes.
Add the vegetable broth, tomatoes, and fava beans and bring to a boil.
Reduce the heat to low and simmer, stirring occasionally, until the stew is thick and the flavors are blended, about 25 minutes.
Stir in the parsley and serve hot.
