Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups vegetable broth
- 1 (14-ounce) can diced tomatoes
- 1 (14-ounce) can fava beans, drained and rinsed
- 2 tablespoons chopped fresh parsley
Directions
- Heat the olive oil in a large pot over medium-high heat.
- Add the onion and garlic and cook, stirring occasionally, until the onions are softened, about 5 minutes.
- Add the carrots, oregano, paprika, cumin, salt, and pepper and cook, stirring occasionally, until the carrots are slightly softened, about 5 minutes.
- Add the vegetable broth, tomatoes, and fava beans and bring to a boil.
- Reduce the heat to low and simmer, stirring occasionally, until the stew is thick and the flavors are blended, about 25 minutes.
- Stir in the parsley and serve hot.
