Ingredients
- 1 lb. chicken thighs, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1/4 cup cornstarch
- 1/4 cup white sugar
- 1/4 cup white vinegar
- 1/4 cup soy sauce
- 2 tablespoons ketchup
- 1 tablespoon garlic powder
- 1/2 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes
- 2 tablespoons water
- 1/4 cup pineapple chunks
- 1 large onion, diced
- 1 red bell pepper, diced
Directions
- In a medium bowl, mix together the cornstarch, sugar, vinegar, soy sauce, ketchup, garlic powder, ginger, and red pepper flakes. Set aside.
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 10 minutes. Remove the chicken from the skillet and set aside.
- Add the sauce mixture to the skillet and stir until combined. Add the water and bring to a simmer, stirring constantly. Add the pineapple chunks, onion, bell pepper and cooked chicken. Simmer for 5 minutes or until the vegetables are tender.
- Serve over hot cooked rice.
