Ingredients

  • 1 pound of ground beef
  • 1 onion, diced
  • 1 teaspoon of garlic powder
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of oregano
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • 10 white flour tortillas
  • 4 cups of shredded cheese (Monterey Jack and Cheddar mix)
  • 2 cups of salsa
  • 1/2 cup of sour cream
  • 1/2 cup of chopped cilantro

Directions

  1. Preheat oven to 350 degrees.
  2. In a large skillet, cook ground beef over medium heat until browned. Drain grease and return to skillet.
  3. Add the diced onion, garlic powder, chili powder, cumin, oregano, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Spoon the beef mixture into each tortilla and roll into a cylinder. Place the enchiladas in a 9x13 inch baking dish.
  5. Top the enchiladas with the shredded cheese.
  6. In a medium bowl, mix together the salsa, sour cream, and cilantro. Pour over the enchiladas.
  7. Cover the baking dish with aluminum foil and bake for 30 minutes.
  8. Remove the aluminum foil and bake for an additional 15 minutes.
  9. Serve with your favorite toppings and enjoy!
