This lighter version of shrimp scampi is a healthier twist on the classic dish. Baked instead of fried, this shrimp scampi is still packed with flavor from garlic, lemon, and herbs. It's a perfect option for a quick and easy weeknight dinner or a fancy weekend meal.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, combine shrimp, garlic, olive oil, lemon juice, parsley, red pepper flakes, salt, and pepper. Toss to coat the shrimp evenly.
  3. Transfer the shrimp mixture to a baking dish and spread it out into an even layer.
  4. In a small bowl, mix breadcrumbs and Parmesan cheese. Sprinkle this mixture over the shrimp in the baking dish.
  5. Bake in the preheated oven for 15-20 minutes, until the shrimp is pink and cooked through.
  6. Serve the baked shrimp scampi hot, garnished with additional parsley and lemon slices.
