Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup vegetable oil
- 2 tablespoons freshly squeezed lemon juice
- 2 lemons, zested
- 2 tablespoons brown sugar
- 1 cup diced plums
- 1 tablespoon powdered sugar (for garnish)
Directions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat together the sugar, eggs, and vanilla extract until light and fluffy. Slowly add the oil and lemon juice and continue to beat until combined.
- Stir in the flour mixture and mix until just combined.
- Fold in the zested lemon and the diced plums.
- Spread the batter into the prepared cake pan and sprinkle with the brown sugar. Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool for 10 minutes before removing from the pan and transferring to a wire rack to cool completely.
- To serve, dust the top of the cake with powdered sugar.
