Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup vegetable oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 lemons, zested
  • 2 tablespoons brown sugar
  • 1 cup diced plums
  • 1 tablespoon powdered sugar (for garnish)

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the sugar, eggs, and vanilla extract until light and fluffy. Slowly add the oil and lemon juice and continue to beat until combined.
  4. Stir in the flour mixture and mix until just combined.
  5. Fold in the zested lemon and the diced plums.
  6. Spread the batter into the prepared cake pan and sprinkle with the brown sugar. Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Allow the cake to cool for 10 minutes before removing from the pan and transferring to a wire rack to cool completely.
  8. To serve, dust the top of the cake with powdered sugar.
