Ingredients
- 2 cups whole wheat flour
- 2 cups all-purpose flour
- 1/4 cup wheat germ
- 1/4 cup oats
- 1/4 cup sunflower seeds
- 1/4 cup flax seeds
- 2 tsp. active dry yeast
- 2 tsp. salt
- 2 tsp. sugar
- 1 1/2 cups warm water
- 2 tbsp. olive oil
Directions
- In a large bowl, combine the flours, wheat germ, oats, sunflower seeds and flax seeds. In a small bowl, dissolve the yeast and sugar in warm water. Let sit until the yeast is activated and foamy, about 5 minutes. Add to the dry ingredients and mix until combined. Cover the bowl and let sit for 10 minutes.
- Add the salt and olive oil to the dough and knead for 8-10 minutes until the dough is soft and elastic. Place the dough in a greased bowl and cover with plastic wrap. Let the dough rise for 1 hour or until doubled in size.
- Divide the dough into two pieces and shape into two round loaves. Place the loaves on a baking sheet lined with parchment paper. Cover and let rise for 30 minutes.
- Preheat the oven to 375F. Bake the loaves for 25-30 minutes or until the loaves are golden brown and sound hollow when tapped. Let cool on a wire rack before slicing.
