Hearty Multigrain Seeded Bread

Ingredients

  • 2 cups whole wheat flour
  • 2 cups all-purpose flour
  • 1/4 cup wheat germ
  • 1/4 cup oats
  • 1/4 cup sunflower seeds
  • 1/4 cup flax seeds
  • 2 tsp. active dry yeast
  • 2 tsp. salt
  • 2 tsp. sugar
  • 1 1/2 cups warm water
  • 2 tbsp. olive oil

Directions

  1. In a large bowl, combine the flours, wheat germ, oats, sunflower seeds and flax seeds. In a small bowl, dissolve the yeast and sugar in warm water. Let sit until the yeast is activated and foamy, about 5 minutes. Add to the dry ingredients and mix until combined. Cover the bowl and let sit for 10 minutes.
  2. Add the salt and olive oil to the dough and knead for 8-10 minutes until the dough is soft and elastic. Place the dough in a greased bowl and cover with plastic wrap. Let the dough rise for 1 hour or until doubled in size.
  3. Divide the dough into two pieces and shape into two round loaves. Place the loaves on a baking sheet lined with parchment paper. Cover and let rise for 30 minutes.
  4. Preheat the oven to 375F. Bake the loaves for 25-30 minutes or until the loaves are golden brown and sound hollow when tapped. Let cool on a wire rack before slicing.
