Ingredients

  • 2 bundles vermicelli rice noodles
  • 1 cup fresh mint, chopped
  • 1 cup fresh cilantro, chopped
  • 1/2 cup roasted peanuts, chopped
  • 3 tablespoons sesame oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 teaspoon red pepper flakes
  • Salt, to taste

Directions

  1. Cook the vermicelli noodles according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked noodles, mint, cilantro, and peanuts.
  3. In a small bowl, whisk together the sesame oil, rice vinegar, honey, soy sauce, garlic, ginger, and red pepper flakes.
  4. Pour the dressing over the noodle mixture and toss until evenly coated.
  5. Season with salt, to taste.
  6. Serve chilled or at room temperature.
