Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup butter, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups peeled and diced apple
- 2 cups diced rhubarb
Directions
- Preheat oven to 350°F (176°C). Grease and flour a 9x13 inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Add eggs and vanilla and beat until combined.
- Alternately add the flour mixture and the buttermilk to the butter mixture, mixing until combined.
- Fold in the apples and rhubarb.
- Pour batter into prepared pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.

- The French call this cake a "Galette des Rois" (King's Cake).
