Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups peeled and diced apple
  • 2 cups diced rhubarb

Directions

  1. Preheat oven to 350°F (176°C). Grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs and vanilla and beat until combined.
  4. Alternately add the flour mixture and the buttermilk to the butter mixture, mixing until combined.
  5. Fold in the apples and rhubarb.
  6. Pour batter into prepared pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before serving.

  • The French call this cake a "Galette des Rois" (King's Cake).
  • This cake is traditionally served during the Christmas season.
