Ingredients
3 egg yolks
1/2 cup of melted butter
2 tablespoons of white wine vinegar
1 tablespoon of chopped fresh tarragon
1 tablespoon of lemon juice
Salt and pepper to taste
Directions
In a medium saucepan, heat the butter until it is just melted.
Add the egg yolks and whisk until blended.
Add the white wine vinegar, tarragon, and lemon juice and continue to whisk until blended.
Continue to whisk over medium heat until the sauce thickens and coats the back of a spoon.
Remove from heat and add salt and pepper to taste.
