Ingredients
- 3 egg yolks
- 1/2 cup of melted butter
- 2 tablespoons of white wine vinegar
- 1 tablespoon of chopped fresh tarragon
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Directions
- In a medium saucepan, heat the butter until it is just melted.
- Add the egg yolks and whisk until blended.
- Add the white wine vinegar, tarragon, and lemon juice and continue to whisk until blended.
- Continue to whisk over medium heat until the sauce thickens and coats the back of a spoon.
- Remove from heat and add salt and pepper to taste.
