Ingredients
- 3 cups cooked chicken, shredded
- 1 (4-ounce) can diced green chiles
- 1 (10-ounce) can red enchilada sauce
- 1 (8-ounce) package shredded Mexican cheese blend
- 1 (8.5-ounce) package cornbread mix
- 1/4 cup melted butter
- 1/2 cup sour cream
- 1/2 cup milk
Directions
- Preheat oven to 375°F. Grease a 9x13-inch baking dish.
- In a medium bowl, combine chicken, green chiles, enchilada sauce, and 1/2 cup of the cheese. Spread mixture in the prepared baking dish.
- In the same bowl, mix together the cornbread mix, melted butter, sour cream, and milk. Spread over the chicken mixture in the baking dish.
- Sprinkle remaining 1/2 cup of cheese on top. Bake for 30 minutes, or until the cheese is melted and the cornbread is golden brown.
- Let cool for 10 minutes before serving.
