Ingredients
- 1/3 cup butter
- 1/2 cup sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons lemon juice
- 1/4 teaspoon grated lemon zest
- 2 eggs, beaten
- 1 (9 inch) unbaked pastry shell
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan, melt the butter over low heat. Stir in the sugar, flour, lemon juice and lemon zest. Cook, stirring, for 2 minutes.
- Stir in eggs and cook, stirring, for 2 minutes more. Remove from heat and set aside.
- Pour the lemon curd into the pastry shell. Bake in preheated oven for 25 to 30 minutes, or until golden brown.
- Cool on a wire rack before serving.
