Ingredients

  • 1/3 cup butter
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons lemon juice
  • 1/4 teaspoon grated lemon zest
  • 2 eggs, beaten
  • 1 (9 inch) unbaked pastry shell

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium saucepan, melt the butter over low heat. Stir in the sugar, flour, lemon juice and lemon zest. Cook, stirring, for 2 minutes.
  3. Stir in eggs and cook, stirring, for 2 minutes more. Remove from heat and set aside.
  4. Pour the lemon curd into the pastry shell. Bake in preheated oven for 25 to 30 minutes, or until golden brown.
  5. Cool on a wire rack before serving.
