Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 2 cups arugula
  • 2 tablespoons sesame seeds
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 400°F.
  2. Toss the cauliflower with the olive oil and salt, and spread it on a baking sheet.
  3. Roast in the oven for 20 minutes, stirring once halfway through.
  4. Let cool.
  5. In a large bowl, combine the arugula, roasted cauliflower, and sesame seeds.
  6. In a small bowl, whisk together the honey, apple cider vinegar, olive oil, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve immediately.
