Ingredients

  • 1 cup long-grain white or brown rice, cooked
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/2 cup orange bell pepper, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the cooked rice, bell peppers, cucumber, red onion, parsley, and mint.
  2. In a small bowl, whisk together the olive oil and red wine vinegar, then pour over the rice mixture and toss to combine.
  3. Season with salt and pepper to taste.
