Ingredients

  • 1 bunch kale, washed, stemmed and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, halved
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the kale, tomatoes, feta cheese, and olives.
  2. In a small bowl, whisk together the olive oil, vinegar, oregano, garlic, salt, and pepper. Pour the dressing over the salad and toss to combine.
  3. Serve immediately, or chill in the refrigerator for up to 1 hour before serving.
