Ingredients
- 1 bunch kale, washed, stemmed and chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, halved
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- Salt and pepper to taste
Directions
- In a large bowl, combine the kale, tomatoes, feta cheese, and olives.
- In a small bowl, whisk together the olive oil, vinegar, oregano, garlic, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Serve immediately, or chill in the refrigerator for up to 1 hour before serving.
