Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup raspberry or other jam

Directions

  1. In a large bowl, cream together butter and sugar until light and fluffy.
  2. Add eggs, one at a time, and mix until well combined.
  3. In a separate bowl, sift together flour, salt, and baking powder and add to the butter-sugar mixture.
  4. Mix until a soft dough is formed.
  5. On a lightly floured surface, roll out the dough to 1/4-inch thickness.
  6. Using a 2-inch round cookie cutter, cut out circles of dough and place on an ungreased baking sheet.
  7. Place 1 teaspoon of jam in the center of each cookie.
  8. Fold each cookie in half and press the edges to seal the corners.
  9. Bake at 350°F for 15-18 minutes, or until golden brown.
  10. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
