Dairy-Free Whole Wheat Pumpkin Bread
Ingredients
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar
2 large eggs
2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup raspberry or other jam
Directions
In a large bowl, cream together butter and sugar until light and fluffy.
Add eggs, one at a time, and mix until well combined.
In a separate bowl, sift together flour, salt, and baking powder and add to the butter-sugar mixture.
Mix until a soft dough is formed.
On a lightly floured surface, roll out the dough to 1/4-inch thickness.
Using a 2-inch round cookie cutter, cut out circles of dough and place on an ungreased baking sheet.
Place 1 teaspoon of jam in the center of each cookie.
Fold each cookie in half and press the edges to seal the corners.
Bake at 350°F for 15-18 minutes, or until golden brown.
Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Kruschicki are traditionally made around Christmas time in Poland.
The name Kruschicki is derived from the Polish word “krucha” which means “crumbly”.
These cookies can be filled with any type of jam or preserves.
