Garlic Shrimp and Asparagus Risotto

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup Arborio rice
  • 3 cups chicken broth
  • 1/2 pound medium shrimp, peeled and deveined
  • 1/2 pound asparagus, cut into 1-inch pieces
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook, stirring, for 2 minutes.
  2. Add the rice and cook, stirring, for 1 minute.
  3. Add the chicken broth and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 15 minutes.
  4. Add the shrimp and asparagus and cook, stirring, for 5 minutes or until the shrimp are cooked through and the asparagus is tender.
  5. Stir in the Parmesan cheese and season with salt and pepper to taste.
  6. Serve hot.
