Easy Authentic Spanish Rice

Ingredients

  • 1 cup of uncooked white long grain rice
  • 1 tablespoon of olive oil
  • 1/2 cup of diced onions
  • 1/2 cup of diced red bell peppers
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 cup of diced tomatoes
  • 1 1/2 cups of vegetable broth

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onions, bell peppers, and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, chili powder, oregano, salt, and pepper to the pan and stir to combine.
  3. Add the tomatoes and vegetable broth and stir to combine. Add the rice and stir to combine.
  4. Bring the mixture to a boil, reduce the heat to low, and simmer for 20 minutes, or until the rice is cooked through.
  5. Serve the Spanish rice hot.
