Ingredients
- 1 cup of uncooked white long grain rice
- 1 tablespoon of olive oil
- 1/2 cup of diced onions
- 1/2 cup of diced red bell peppers
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of diced tomatoes
- 1 1/2 cups of vegetable broth
Directions
- Heat the olive oil in a large saucepan over medium heat. Add the onions, bell peppers, and garlic and cook until softened, about 5 minutes.
- Add the cumin, chili powder, oregano, salt, and pepper to the pan and stir to combine.
- Add the tomatoes and vegetable broth and stir to combine. Add the rice and stir to combine.
- Bring the mixture to a boil, reduce the heat to low, and simmer for 20 minutes, or until the rice is cooked through.
- Serve the Spanish rice hot.
