Ingredients

  • 1 lb chicken breasts, cut into cubes
  • 2 tablespoons vegetable oil
  • 1/2 cup cornstarch
  • 1/4 cup soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup water
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1/2 onion, cut into chunks
  • 2 green onions, sliced

Directions

  1. In a medium bowl, add chicken and cornstarch and mix to combine.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and crispy, about 5 minutes.
  3. In a small bowl, whisk together soy sauce, rice wine vinegar, sugar, garlic powder, ginger, red pepper flakes, and water. Set aside.
  4. Add bell peppers, onion, and sauce to the skillet. Cook until vegetables are tender, about 3 minutes.
  5. Stir in green onions and cook for 1 minute more.
  6. Serve over rice.
