Ingredients

  • Cooked rice - 3 cups
  • Vegetable oil - 2 tablespoons
  • Eggs - 2, beaten
  • Garlic cloves - 3, minced
  • Ginger - 1 tablespoon, grated
  • Onion - 1, diced
  • Carrots - 2, diced
  • Peas - 1 cup
  • Soy sauce - 3 tablespoons
  • Fish sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 4, chopped
  • Salt and pepper to taste

Directions

  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the beaten eggs to the skillet and scramble them until they are fully cooked. Remove the scrambled eggs from the skillet and set them aside.
  3. In the same skillet, add another tablespoon of vegetable oil and heat it over medium-high heat.
  4. Add the minced garlic and grated ginger to the skillet and sauté them for about a minute until they become fragrant.
  5. Add the diced onion, carrots, and peas to the skillet and stir-fry them for 3-4 minutes until they are tender.
  6. Push the cooked vegetables to one side of the skillet and add the cooked rice to the empty side. Break up any clumps of rice with a spatula and stir-fry it for a couple of minutes.
  7. Pour the soy sauce, fish sauce, and sesame oil over the rice and vegetables. Stir to combine everything evenly.
  8. Add the scrambled eggs back to the skillet and stir them into the rice mixture.
