Ingredients

  • 2 pounds pork tenderloin
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes
  • 1/4 cup tomato paste
  • 1/2 cup chicken broth
  • 1/4 cup red wine
  • 1 teaspoon sugar
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried sage
  • 1/4 teaspoon dried red pepper flakes
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pork tenderloin with salt, dried basil, dried oregano, garlic powder, onion powder, and black pepper. Rub the seasoning into the meat to coat well.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the pork tenderloin on all sides until browned. Remove from the skillet and set aside.
  4. In the same skillet, add diced onions and minced garlic. Cook until onions are translucent and fragrant.
  5. Add crushed tomatoes, tomato paste, chicken broth, red wine, sugar, dried thyme, dried rosemary, dried marjoram, dried parsley, dried sage, and dried red pepper flakes. Stir well to combine.

  7. Place the seared pork tenderloin in a baking dish and pour the tomato sauce over it. Cover the dish with foil.
  8. Bake in the preheated oven for 25-30 minutes, or until the pork is cooked through and reaches an internal temperature of 145°F (63°C).
  9. Remove the foil and let the pork rest for 5 minutes before slicing.
