Ingredients
- 1 can of black beans, drained and rinsed
- 1 can of white beans, drained and rinsed
- 1 cup of cooked corn
- 1 red bell pepper, diced
- 1/2 cup of red onion, diced
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of olive oil
- 1/4 cup of red wine vinegar
- 1 tablespoon of honey
- 1/2 teaspoon of cumin
- Salt and pepper to taste
Directions
- In a large bowl, combine black beans, white beans, corn, bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, red wine vinegar, honey, cumin, salt, and pepper.
- Add the dressing to the salad and mix well.
- Refrigerate for at least 1 hour before serving.
