Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 can of white beans, drained and rinsed
  • 1 cup of cooked corn
  • 1 red bell pepper, diced
  • 1/2 cup of red onion, diced
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of olive oil
  • 1/4 cup of red wine vinegar
  • 1 tablespoon of honey
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine black beans, white beans, corn, bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, honey, cumin, salt, and pepper.
  3. Add the dressing to the salad and mix well.
  4. Refrigerate for at least 1 hour before serving.
