Ingredients

  • 2 cups grated jicama
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin
  • 2 tablespoons olive oil

Directions

  1. Preheat oven to 375°F.
  2. In a medium bowl, combine the jicama, flour, salt and cumin. Mix until combined.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Divide the jicama mixture into 8 equal portions. Place one portion in the skillet and flatten with the back of a spoon to form a tortilla shape.
  5. Cook the tortilla for 2 minutes on each side, or until golden brown. Transfer to a baking sheet lined with parchment paper.
  6. Repeat with remaining tortillas.
  7. Bake for 20 minutes, or until golden brown and crisp.
  8. Serve with your favorite toppings or fillings.
