Grilled Balsamic Chicken Breast
Ingredients
2 cups grated jicama
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon cumin
2 tablespoons olive oil
Directions
Preheat oven to 375°F.
In a medium bowl, combine the jicama, flour, salt and cumin. Mix until combined.
Heat the olive oil in a large skillet over medium heat.
Divide the jicama mixture into 8 equal portions. Place one portion in the skillet and flatten with the back of a spoon to form a tortilla shape.
Cook the tortilla for 2 minutes on each side, or until golden brown. Transfer to a baking sheet lined with parchment paper.
Repeat with remaining tortillas.
Bake for 20 minutes, or until golden brown and crisp.
Serve with your favorite toppings or fillings.
